Edamame Hummus Wrap
A healthy and delicious wrap filled with edamame hummus, fresh vegetables, and feta cheese.
Ingredients - Serves 4
- Feta cheese - 1/2 cup, crumbled
- Red bell pepper - 1, thinly sliced
- Spinach - 2 cups
- Whole wheat wraps - 4
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tahini - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 1 clove
- Edamame - 1 cup, shelled and cooked
Let's Get Started
- In a food processor, combine the edamame, garlic, lemon juice, tahini, olive oil, and salt. Process until smooth.
- Spread a quarter of the edamame hummus on each wrap.
- Top with spinach, red bell pepper slices, and feta cheese.
- Roll up the wraps, cut in half, and serve.
