Edamame and Kale Farro Salad
A hearty and healthy salad packed with nutty farro, tender edamame, crunchy kale, and a tangy vinaigrette.
Ingredients - Serves 4
- Salt and pepper - To taste
- Honey - 1 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Kale - 2 cups, chopped
- Edamame - 1 cup, shelled and cooked
- Water - 3 cups
- Farro - 1 cup
Let's Get Started
- Rinse the farro under cold water and drain.
- In a medium pot, bring the water to a boil. Add the farro, reduce the heat to low, cover, and simmer for 25-30 minutes, or until the farro is tender.
- While the farro is cooking, prepare the vinaigrette by whisking together the olive oil, lemon juice, honey, salt, and pepper.
- In a large bowl, combine the cooked farro, edamame, and kale. Toss with the vinaigrette until well coated.
- Serve the salad warm or chilled.
