Edamame and Barley Bowl
A healthy and filling bowl packed with protein and fiber. Perfect for a quick lunch or dinner.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame oil - 2 tablespoons
- Green onions - 2, thinly sliced
- Red bell pepper - 1, diced
- Carrot - 1 large, shredded
- Edamame - 2 cups, shelled and cooked
- Water - 3 cups
- Pearl barley - 1 cup
Let's Get Started
- In a medium saucepan, bring the barley and water to a boil. Reduce heat, cover, and simmer for 25-30 minutes, or until barley is tender.
- In a large bowl, combine the cooked barley, edamame, carrot, bell pepper, and green onions.
- In a small bowl, whisk together the sesame oil and soy sauce. Pour over the barley mixture and toss to combine.
- Sprinkle with sesame seeds before serving.
