  1. In a saucepan, combine the coconut milk, palm sugar, pandan leaves, water, and salt.
  2. Bring the mixture to a simmer over medium heat, stirring until the palm sugar is dissolved.
  3. Remove the pandan leaves from the mixture.
  4. Add the durian flesh to the saucepan and stir well to combine.
  5. Simmer the mixture for about 10 minutes, stirring occasionally.
  6. Remove from heat and let it cool slightly.
  7. Transfer the mixture to a blender or food processor and blend until smooth.
  8. Pour the durian pengat into serving bowls and refrigerate for at least 2 hours, or until chilled.
