Dragon Beard Candy
Dragon Beard Candy is a traditional Chinese sweet similar to spun sugar, which is said to resemble a dragon's beard. It's a handmade traditional art of China with a history of over 2000 years.
Ingredients - Serves 10
- Coconut flakes - 1 cup
- Peanut powder - 1 cup
- Cornstarch - 1/2 cup
- White vinegar - 1 teaspoon
- Maltose - 1 tablespoon
- Water - 1/2 cup
- Sugar - 2 cups
- Corn syrup - 1 cup
Let's Get Started
- In a saucepan, combine the corn syrup, sugar, water, maltose, and vinegar. Stir over medium heat until the sugar dissolves.
- Increase the heat to high and bring the mixture to a boil. Continue boiling until it reaches 270°F (the soft-crack stage) on a candy thermometer.
- Pour the hot syrup onto a cornstarch-dusted marble slab or baking sheet. Allow it to cool until it can be handled, about 15 minutes.
- When the candy is cool enough to handle, stretch it out into a long rope. Fold it over and twist. Repeat this process until you have a thin, thread-like strand.
- Cut the candy into small pieces and roll them in the peanut powder and coconut flakes.
- Serve the candy immediately or store it in an airtight container.
