  1. In a saucepan, heat the milk and sugar over medium heat until the sugar is dissolved. Let it cool.
  2. In a separate bowl, whisk the egg whites until frothy.
  3. Slowly pour the cooled milk into the egg whites while whisking continuously.
  4. Strain the mixture through a fine sieve into a heatproof dish.
  5. Cover the dish with foil and place it in a larger pot filled with water.
  6. Cover the pot and bring the water to a boil. Then reduce the heat to low and let it simmer for about 1 hour, or until the pudding is set.
  7. Remove the dish from the pot and let the pudding cool before serving.
