Dongpo Pork
Dongpo Pork is a traditional Chinese dish made from pork belly, named after the famous Song Dynasty poet Su Dongpo. It's characterized by its rich and savory taste, with the pork belly cooked until it's incredibly tender.
Ingredients - Serves 4
- Water - Enough to cover the pork
- Star anise - 2 pieces
- Ginger - 1 piece, sliced
- Scallions - 4, cut into sections
- Sugar - 1/2 cup
- Dark soy sauce - 1/4 cup
- Light soy sauce - 1/2 cup
- Cooking wine - 1 cup
- Pork belly - 1 kg
Let's Get Started
- Blanch the pork belly in boiling water for about 5 minutes, then remove and rinse.
- Heat a pot over medium heat, add the sugar and a little water, cook until the sugar melts and turns a caramel color.
- Add the pork belly to the pot, turning it in the sugar until it's coated.
- Add the cooking wine, light soy sauce, dark soy sauce, scallions, ginger, star anise, and enough water to cover the pork.
- Bring the pot to a boil, then reduce to a simmer, cover, and cook for about 3 hours.
- Check the pork occasionally, adding more water if necessary.
- The dish is done when the pork is very tender and the sauce has reduced to a thick consistency.
- Serve the Dongpo Pork with some of the sauce poured over it.
