Dilly Beans
Dilly beans are a type of pickled green bean, flavored with dill. They're a great snack or side dish.
Ingredients - Serves 8
- Red pepper flakes - 1/2 teaspoon
- Garlic - 4 cloves, peeled
- Dill seeds - 1 tablespoon
- Salt - 2 tablespoons
- Water - 2 cups
- White vinegar - 2 cups
- Green beans - 1 pound, trimmed
Let's Get Started
- Sterilize 4 pint jars and lids in boiling water for at least 5 minutes.
- Pack green beans into the hot, sterilized jars, standing them on their ends.
- In a large saucepan, combine the vinegar, water, and salt. Bring to a boil over high heat.
- In each jar, place 1/4 tablespoon of dill seeds, 1 peeled garlic clove, and 1/8 teaspoon of red pepper flakes.
- Pour the boiling vinegar mixture over the beans in the jars, filling to within 1/4 inch of the top.
- Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars.
- Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight.
- Store in a cool, dark area, and wait at least 2 weeks before opening.
