Damper
Damper is a traditional Australian soda bread that's prepared by swagmen, drovers, stockmen and other travelers. It's a simple, tasty bread baked in the coals of a campfire.
Ingredients - Serves 6
- Water - 1/2 cup
- Milk - 1 cup
- Butter - 3 tablespoons
- Salt - 1/2 teaspoon
- Self-raising flour - 3 cups
Let's Get Started
- Preheat your oven to 200°C (390°F) and line a baking tray with baking paper.
- In a large bowl, mix together the flour and salt.
- Rub the butter into the flour mixture with your fingertips until it resembles fine breadcrumbs.
- Make a well in the center of the flour mixture and pour in the milk and water.
- Mix together until you have a soft dough. If the dough is too sticky, add a little more flour.
- Turn the dough out onto a floured surface and knead lightly for 1-2 minutes.
- Shape the dough into a round loaf and place it on the prepared baking tray. Use a sharp knife to cut a cross into the top of the loaf.
- Bake for 25-30 minutes, or until the damper is golden brown and sounds hollow when you tap it on the bottom.
