Dalmatian Octopus Salad
A refreshing and flavorful salad made with tender octopus, tomatoes, olives, and herbs.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Extra virgin olive oil - 3 tablespoons
- Fresh basil - 1/4 cup, chopped
- Fresh parsley - 1/4 cup, chopped
- Kalamata olives - 1/2 cup, pitted
- Red onion - 1/2 medium, thinly sliced
- Tomatoes - 2 large, diced
- Octopus - 1.5 pounds
Let's Get Started
- Bring a large pot of water to a boil. Add the octopus and cook for 45-60 minutes, or until tender. Drain and let it cool.
- Once cooled, cut the octopus into bite-sized pieces.
- In a large bowl, combine the octopus, tomatoes, red onion, olives, parsley, and basil.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve chilled and enjoy!
