Dakdoritang
Dakdoritang is a spicy Korean chicken stew made with tender chicken, vegetables, and a flavorful red pepper sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2 stalks, chopped
- Chicken broth - 4 cups
- Sesame oil - 1 tablespoon
- Sugar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Gochujang (korean red pepper paste) - 3 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 large, sliced
- Carrots - 2 medium, sliced
- Potatoes - 2 medium, peeled and cubed
- Chicken - 1.5 lbs, cut into pieces
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the chicken pieces and cook until browned on all sides.
- Remove the chicken from the pot and set aside.
- In the same pot, add the potatoes, carrots, onion, and garlic. Cook for a few minutes until slightly softened.
- In a small bowl, mix together the gochujang, soy sauce, sugar, and sesame oil.
- Add the gochujang mixture to the pot and stir well to coat the vegetables.
- Return the chicken to the pot and pour in the chicken broth.
- Bring the stew to a boil, then reduce the heat and simmer for about 30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
