Curried Lentils with Brown Rice

Ingredients - Serves 4

Let's Get Started

  1. In a saucepan, bring the water to a boil. Add the brown rice, reduce the heat to low, cover, and let simmer for 45 minutes.
  2. While the rice is cooking, heat the olive oil in a large pot over medium heat.
  3. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  4. Add the curry powder and cook for another minute.
  5. Add the lentils and vegetable broth. Bring to a boil, then reduce the heat and let simmer until the lentils are soft, about 30 minutes.
  6. Season with salt and pepper.
  7. Serve the lentils over the cooked brown rice.
