Curried Lentils with Brown Rice

Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable broth - 4 cups
- Red lentils - 1 cup
- Curry powder - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Water - 2 cups
- Brown rice - 1 cup
Let's Get Started
- In a saucepan, bring the water to a boil. Add the brown rice, reduce the heat to low, cover, and let simmer for 45 minutes.
- While the rice is cooking, heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the curry powder and cook for another minute.
- Add the lentils and vegetable broth. Bring to a boil, then reduce the heat and let simmer until the lentils are soft, about 30 minutes.
- Season with salt and pepper.
- Serve the lentils over the cooked brown rice.
