Curried Lentil Tomato Soup
A hearty, flavorful soup made with lentils, tomatoes, and a blend of spices.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable broth - 4 cups
- Canned diced tomatoes - 1 can (14.5 ounces)
- Dried lentils - 1 cup
- Curry powder - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the curry powder and cook for another minute.
- Add the lentils, tomatoes, and vegetable broth. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils are tender.
