Mazurek
Mazurek is a traditional Polish Easter cake made with a shortbread crust and topped with various sweet toppings.
Ingredients - Serves 12
- Powdered sugar - For dusting
- Dried fruits (e.g. raisins, cranberries) - 1/2 cup
- Chopped nuts (e.g. almonds, walnuts) - 1/2 cup
- Apricot jam - 1/2 cup
- Vanilla extract - 1 teaspoon
- Egg yolks - 2
- Granulated sugar - 1/2 cup
- Unsalted butter - 1 cup, softened
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg yolks and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the flour to the mixture and mix until a dough forms.
- Press the dough into a greased 9x13-inch baking dish, forming an even layer.
- Spread the apricot jam evenly over the dough.
- Sprinkle the chopped nuts and dried fruits over the jam.
- Bake in the preheated oven for 25 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool completely.
- Once cooled, dust the Mazurek with powdered sugar.
- Cut into squares or rectangles and serve.
