Croissants
These flaky and buttery croissants are a classic French pastry that are perfect for breakfast or brunch.
Ingredients - Serves 12
- Egg - 1
- Milk - 1/2 cup, cold
- Unsalted butter - 1 1/2 cups, cold
- Active dry yeast - 2 1/4 teaspoons
- Salt - 1 teaspoon
- Granulated sugar - 1/4 cup
- All-purpose flour - 3 cups
Let's Get Started
- In a large mixing bowl, combine the flour, sugar, salt, and yeast.
- Cut the cold butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until it resembles coarse crumbs.
- Add the cold milk and egg to the mixture. Stir until the dough comes together.
- Transfer the dough to a lightly floured surface and knead it for about 5 minutes, or until it becomes smooth and elastic.
- Shape the dough into a ball and place it in a greased bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 2 hours, or until it doubles in size.
- Once the dough has risen, punch it down to release the air. Roll it out into a large rectangle, about 1/4 inch thick.
- Fold the dough into thirds, like a letter. Turn it 90 degrees and roll it out again into a large rectangle. Fold it into thirds again.
- Repeat the rolling and folding process two more times, for a total of four times.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or overnight.
- Preheat the oven to 400°F (200°C).
- Remove the dough from the refrigerator and roll it out into a large rectangle, about 1/4 inch thick.
- Cut the dough into triangles, starting from the wide end and rolling towards the pointed end.
- Place the croissants on a baking sheet lined with parchment paper, leaving some space between them.
- Cover the croissants with a clean kitchen towel and let them rise in a warm place for about 30 minutes, or until they have doubled in size.
- Brush the croissants with beaten egg for a shiny finish.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Remove from the oven and let the croissants cool on a wire rack before serving.
