Crespelle
Crespelle are the Italian version of the well-known French crepes. They can be served with a variety of fillings, both sweet and savory.
Ingredients - Serves 4
- Marinara sauce - 1 cup
- Parmesan cheese - 1/2 cup, grated
- Spinach - 1 cup, cooked and drained
- Ricotta cheese - 1 cup
- Unsalted butter - 2 tablespoons, melted
- Salt - 1/4 teaspoon
- Milk - 1 cup
- Eggs - 2
- All-purpose flour - 1 cup
Let's Get Started
- In a blender, combine the flour, eggs, milk, salt, and melted butter. Blend until smooth.
- Heat a non-stick skillet over medium heat. Pour in a small amount of the batter and swirl to coat the bottom of the skillet. Cook until the crespelle is lightly browned on the bottom, then flip and cook the other side. Repeat with the remaining batter.
- Preheat the oven to 350°F.
- In a bowl, combine the ricotta, spinach, and Parmesan. Spoon a small amount of this mixture onto each crespelle and roll up.
- Place the filled crespelle in a baking dish and top with the marinara sauce.
- Bake for 15 minutes, or until heated through.
