Creamy Spinach Lentils
These creamy spinach lentils are a hearty, comforting dish made with brown lentils, fresh spinach, and a creamy coconut milk sauce.

- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Spinach - 2 cups, chopped
- Coconut milk - 1 can
- Water - 2 cups
- Brown lentils - 1 cup
Let's Get Started
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
- Add the lentils, water, and coconut milk to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.
