  2. Add the onion to the pot and cook until soft, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Add the potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  5. Use a blender or immersion blender to puree about half of the soup, leaving some chunks of potato. Return the soup to the pot.
  6. Stir in the heavy cream and season with salt and pepper.
