Creamy Coconut Lentil Curry
This hearty and flavorful curry is made with tender lentils and rich coconut milk.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable broth - 2 cups
- Coconut milk - 1 can
- Red lentils - 1 cup
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Coconut oil - 2 tablespoons
Let's Get Started
- Heat the coconut oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
- Add the curry powder and turmeric and cook for another minute.
