Creamed Spinach and Potato Casserole

  2. Boil the potatoes until tender, then drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
  4. Gradually whisk in the milk, then bring to a boil. Reduce the heat and simmer until the sauce thickens.
