Creamed Spinach and Potato Casserole
This creamy, comforting casserole combines the earthy flavors of spinach and potato, topped with a crispy cheese crust.
Ingredients - Serves 6
- Cheddar cheese - 1 cup, grated
- Nutmeg - 1/4 teaspoon
- Salt and pepper - To taste
- Milk - 2 cups
- Flour - 2 tablespoons
- Butter - 4 tablespoons
- Spinach - 2 cups, cooked and drained
- Potatoes - 6 medium, peeled and sliced
Let's Get Started
- Preheat the oven to 350°F.
- Boil the potatoes until tender, then drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
- Gradually whisk in the milk, then bring to a boil. Reduce the heat and simmer until the sauce thickens.
