Couscous with Roasted Vegetables
A healthy and delicious dish of fluffy couscous mixed with a variety of roasted vegetables.
Ingredients - Serves 4
- Lemon - 1, juiced
- Fresh herbs (such as parsley and basil) - 1/4 cup, chopped
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Assorted vegetables (such as bell peppers, zucchini, and cherry tomatoes) - 4 cups, chopped
- Olive oil - 2 tablespoons
- Couscous - 1 cup
Let's Get Started
- Preheat the oven to 400°F.
- Toss the chopped vegetables with the olive oil, minced garlic, salt, and pepper.
- Spread the vegetables out on a baking sheet and roast in the oven for 20-25 minutes, or until tender and slightly charred.
- While the vegetables are roasting, prepare the couscous according to the package instructions.
- Once the vegetables and couscous are done, combine them in a large bowl.
- Add the chopped herbs and lemon juice, and stir to combine.
- Season with additional salt and pepper if needed, and serve warm.
