Country Potato and Asparagus Frittata

- Salt and pepper - To taste
- Cheddar cheese - 1 cup, shredded
- Milk - 1/4 cup
- Eggs - 6 large
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Asparagus - 1 bunch, trimmed and cut into 1-inch pieces
- Potatoes - 2 medium, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Preheat the oven to 400°F.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the potatoes and cook until golden and crispy, about 10 minutes.
- Add the asparagus, onion, and garlic and cook until the vegetables are tender, about 5 minutes.
- In a large bowl, whisk together the eggs, milk, half of the cheese, salt, and pepper.
