Corn Stuffed Peppers
These colorful peppers stuffed with corn, black beans, and cheese make a delicious and healthy main course.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cheddar cheese - 1 cup, shredded
- Cumin - 1 teaspoon
- Black beans - 1 can, drained and rinsed
- Corn - 1 cup, fresh or frozen
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
- Bell peppers - 4, tops cut off and seeds removed
Let's Get Started
- Preheat the oven to 375°F.
- Place the peppers in a baking dish and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the corn, black beans, cumin, salt, and pepper and cook for another 5 minutes.
- Remove the skillet from the heat and stir in the cheese.
- Spoon the corn mixture into the peppers.
- Bake for 25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
