Let's Get Started

  1. Preheat the oven to 375°F.
  2. Place the peppers in a baking dish and set aside.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  5. Add the corn, black beans, cumin, salt, and pepper and cook for another 5 minutes.
  6. Remove the skillet from the heat and stir in the cheese.
  7. Spoon the corn mixture into the peppers.
  8. Bake for 25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
