Corn Relish
This tangy and sweet corn relish is a perfect way to preserve summer's bounty. It's great on burgers, hot dogs, or with a cheese platter.
Ingredients - Serves 8
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Celery seeds - 1 teaspoon
- Mustard seeds - 1 tablespoon
- Sugar - 3/4 cup
- White vinegar - 1 cup
- Red onion - 1, diced
- Green bell pepper - 1, diced
- Red bell pepper - 1, diced
- Fresh corn kernels - 4 cups
Let's Get Started
- In a large pot, combine corn, red bell pepper, green bell pepper, and red onion.
- In a separate bowl, combine vinegar, sugar, mustard seeds, celery seeds, salt, and turmeric. Stir until the sugar is dissolved.
- Pour the vinegar mixture over the vegetables in the pot and stir to combine.
- Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 20 minutes.
- Ladle the hot relish into sterilized jars, leaving 1/2 inch of headspace. Seal the jars and process in a boiling water bath for 15 minutes.
- Let the jars cool completely before storing. The relish will keep for up to 1 year in a cool, dark place.
