Corn Relish

Ingredients - Serves 8

Let's Get Started

  1. In a large pot, combine corn, red bell pepper, green bell pepper, and red onion.
  2. In a separate bowl, combine vinegar, sugar, mustard seeds, celery seeds, salt, and turmeric. Stir until the sugar is dissolved.
  3. Pour the vinegar mixture over the vegetables in the pot and stir to combine.
  4. Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 20 minutes.
  5. Ladle the hot relish into sterilized jars, leaving 1/2 inch of headspace. Seal the jars and process in a boiling water bath for 15 minutes.
  6. Let the jars cool completely before storing. The relish will keep for up to 1 year in a cool, dark place.
