Corn Croquettes
These delicious corn croquettes are crispy on the outside and soft and creamy on the inside. They're a perfect appetizer or side dish.
Ingredients - Serves 4
- Vegetable oil - For frying
- Breadcrumbs - 1 cup
- Eggs - 2
- Salt and pepper - To taste
- Milk - 1/2 cup
- Flour - 1/2 cup
- Butter - 2 tablespoons
- Sweet corn - 2 cups
Let's Get Started
- Melt the butter in a pan over medium heat.
- Add the flour and stir until it forms a paste.
- Gradually add the milk, stirring constantly, until the mixture thickens.
- Add the corn, salt, and pepper and stir until well combined. Remove from heat and let cool.
- Once the mixture is cool, shape it into small croquettes.
- Beat the eggs in a bowl. Place the breadcrumbs in another bowl.
- Dip each croquette in the egg, then roll in the breadcrumbs until fully coated.
- Heat the oil in a pan over medium-high heat.
- Fry the croquettes until they are golden brown on all sides.
- Drain on paper towels and serve hot.
