Corn and Green Bean Medley
This delicious corn and green bean medley is a perfect side dish for any meal.
Ingredients - Serves 6
- Fresh parsley - 1 tablespoon, chopped
- Parmesan cheese - 2 tablespoons, grated
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Green beans - 2 cups, trimmed and halved
- Corn - 2 cups, fresh or frozen
Let's Get Started
- In a large pot, bring water to a boil and cook the corn and green beans for 5 minutes, or until tender-crisp. Drain and set aside.
- In a skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant.
- Add the cooked corn and green beans to the skillet. Season with salt and black pepper. Cook for 3-4 minutes, stirring occasionally, until heated through.
- Remove from heat and sprinkle with grated Parmesan cheese and chopped fresh parsley.
