Corn and Coconut Creamed Spinach
This creamy and flavorful side dish combines sweet corn and coconut milk with sautéed spinach.

- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Coconut milk - 1/2 cup
- Corn kernels - 1 cup, frozen or canned
- Spinach - 1 pound, fresh
Let's Get Started
