Corn and Cheddar Biscuits
These delicious corn and cheddar biscuits are perfect as a side dish or for breakfast.
Ingredients - Serves 12
- Buttermilk - 1 cup
- Corn kernels - 1 cup, cooked
- Cheddar cheese - 1 cup, shredded
- Unsalted butter - 1/2 cup, cold and cubed
- Sugar - 1 tablespoon
- Salt - 1/2 teaspoon
- Baking powder - 1 tablespoon
- Cornmeal - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, cornmeal, baking powder, salt, and sugar.
- Add the cold butter to the dry ingredients and use a pastry cutter or your fingers to cut it into the flour mixture until it resembles coarse crumbs.
- Stir in the shredded cheddar cheese and cooked corn kernels.
- Make a well in the center of the mixture and pour in the buttermilk. Stir until just combined.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Roll out the dough to about 1-inch thickness and use a biscuit cutter to cut out biscuits.
- Place the biscuits onto the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
