Let's Get Started

  1. Combine the minced garlic, rosemary, white wine, olive oil, salt, and pepper in a bowl to make the marinade.
  2. Place the lamb shoulder in a large dish and pour the marinade over it. Cover and refrigerate for at least 2 hours, or overnight if possible.
  3. Preheat your oven to 180°C (350°F).
  4. Place the marinated lamb shoulder in a roasting pan and pour any remaining marinade over it.
  5. Roast the lamb in the preheated oven for about 3 hours, or until the meat is tender and easily pulls away from the bone.
  6. Let the lamb rest for a few minutes before carving and serving.
