Cordero Asado
Cordero Asado, or Roast Lamb, is a traditional Spanish dish that is both simple and delicious. The lamb is marinated in a mixture of garlic, rosemary, and white wine before being slow-roasted to perfection.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- White wine - 1 cup
- Rosemary - 2 sprigs
- Garlic - 4 cloves, minced
- Lamb shoulder - 1.5 kg
Let's Get Started
- Combine the minced garlic, rosemary, white wine, olive oil, salt, and pepper in a bowl to make the marinade.
- Place the lamb shoulder in a large dish and pour the marinade over it. Cover and refrigerate for at least 2 hours, or overnight if possible.
- Preheat your oven to 180°C (350°F).
- Place the marinated lamb shoulder in a roasting pan and pour any remaining marinade over it.
- Roast the lamb in the preheated oven for about 3 hours, or until the meat is tender and easily pulls away from the bone.
- Let the lamb rest for a few minutes before carving and serving.
