Colorado Rack of Lamb

- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Thyme - 1 tablespoon, fresh and chopped
- Rosemary - 2 tablespoons, fresh and chopped
- Garlic - 4 cloves, minced
- Rack of lamb - 1 rack, about 2 pounds
