Colombian Ajiaco Soup
Ajiaco is a traditional Colombian soup made with chicken, potatoes, corn, and a variety of herbs and spices.
Ingredients - Serves 6
- Salt and pepper - To taste
- Lime - 1, cut into wedges
- Sour cream - 1/2 cup
- Avocado - 1, sliced
- Scallions - 4, chopped
- Cilantro - 1/2 cup, chopped
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Chicken broth - 6 cups
- Corn on the cob - 2 ears, husked and cut into thirds
- Potatoes - 4 large, peeled and diced
- Chicken - 1 whole, cut into pieces
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the chicken pieces, onion, garlic, salt, and pepper. Reduce the heat to medium-low and simmer for 30 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
- Add the diced potatoes and corn to the pot. Simmer for another 20 minutes, or until the potatoes are tender.
- Stir in the chopped cilantro and scallions. Season with additional salt and pepper if needed.
- Serve the ajiaco soup hot, garnished with avocado slices, a dollop of sour cream, and a squeeze of lime juice.
