Ingredients - Serves 6

Let's Get Started

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken pieces, onion, garlic, salt, and pepper. Reduce the heat to medium-low and simmer for 30 minutes, or until the chicken is cooked through.
  3. Remove the chicken from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
  4. Add the diced potatoes and corn to the pot. Simmer for another 20 minutes, or until the potatoes are tender.
  5. Stir in the chopped cilantro and scallions. Season with additional salt and pepper if needed.
  6. Serve the ajiaco soup hot, garnished with avocado slices, a dollop of sour cream, and a squeeze of lime juice.
