Colcannon Hash
A traditional Irish dish made with potatoes, cabbage, and bacon. Perfect for breakfast or dinner.
Ingredients - Serves 4
- Green onions - 4, chopped
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Cabbage - 1/2 head, chopped
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Bacon - 4 slices, chopped
- Potatoes - 4 large, peeled and diced
Let's Get Started
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.
- In a large skillet, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
- In the same skillet, add the onion and garlic and cook until soft, about 5 minutes.
- Add the cabbage to the skillet and cook until wilted, about 5 minutes.
- Add the cooked potatoes to the skillet and mash them slightly with a fork. Season with salt and pepper.
- Stir in the butter and green onions, then add the cooked bacon back to the skillet.
- Cook the hash over medium heat until it's crispy on the bottom, about 5 minutes. Flip it over and cook for another 5 minutes on the other side.
- Serve the colcannon hash hot, with extra butter and green onions on top if desired.
