Colcannon Hash

Ingredients - Serves 4

Let's Get Started

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.
  2. In a large skillet, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
  3. In the same skillet, add the onion and garlic and cook until soft, about 5 minutes.
  4. Add the cabbage to the skillet and cook until wilted, about 5 minutes.
  5. Add the cooked potatoes to the skillet and mash them slightly with a fork. Season with salt and pepper.
  6. Stir in the butter and green onions, then add the cooked bacon back to the skillet.
  7. Cook the hash over medium heat until it's crispy on the bottom, about 5 minutes. Flip it over and cook for another 5 minutes on the other side.
  8. Serve the colcannon hash hot, with extra butter and green onions on top if desired.
