Clotted Cream Fudge

Ingredients - Serves 36

Let's Get Started

  1. Line a 20cm square tin with baking parchment.
  2. Put the sugar, golden syrup, clotted cream and salt into a large, heavy-based pan and heat gently, stirring frequently, until the sugar has dissolved.
  3. Increase the heat slightly and bring the mixture to the boil, then as soon as it is boiling, lower the heat and simmer very gently for about 10-15 minutes, stirring continuously, until the mixture has thickened slightly and has reached the soft-ball stage.
  4. Remove the pan from the heat and stir in the vanilla extract, then leave the mixture to cool for 5 minutes.
  5. Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears, then pour it into the prepared tin and leave to cool completely.
  6. When the fudge is cold, cut it into small squares and store in an airtight container.
