Clotted Cream Fudge
This is a traditional British confectionery made with clotted cream for a rich and creamy flavor.
Ingredients - Serves 36
- Salt - A pinch
- Vanilla extract - 1 tsp
- Clotted cream - 227g
- Golden syrup - 100g
- Sugar - 450g
Let's Get Started
- Line a 20cm square tin with baking parchment.
- Put the sugar, golden syrup, clotted cream and salt into a large, heavy-based pan and heat gently, stirring frequently, until the sugar has dissolved.
- Increase the heat slightly and bring the mixture to the boil, then as soon as it is boiling, lower the heat and simmer very gently for about 10-15 minutes, stirring continuously, until the mixture has thickened slightly and has reached the soft-ball stage.
- Remove the pan from the heat and stir in the vanilla extract, then leave the mixture to cool for 5 minutes.
- Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears, then pour it into the prepared tin and leave to cool completely.
- When the fudge is cold, cut it into small squares and store in an airtight container.
