Classic Whoopie Pies
These classic whoopie pies are made with two soft and fluffy chocolate cakes sandwiched together with a creamy vanilla filling.
Ingredients - Serves 12
- Powdered sugar - 1 cup
- Heavy cream - 1 cup
- Milk - 1 cup
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Granulated sugar - 1 cup
- Butter - 1/2 cup, softened
- Salt - 1/2 teaspoon
- Baking soda - 1 teaspoon
- Unsweetened cocoa powder - 1/2 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the egg and vanilla extract and beat until well combined.
- Add the dry ingredients to the wet ingredients in three parts, alternating with the milk, beginning and ending with the dry ingredients.
- Using a cookie scoop or spoon, drop the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cakes are set and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool completely on the baking sheet.
- In a large bowl, beat the heavy cream and powdered sugar together until stiff peaks form.
- Spread a generous amount of the filling onto the flat side of one cake, then top with another cake, flat side down.
- Repeat with the remaining cakes and filling.
- Serve immediately, or store in an airtight container in the refrigerator for up to 3 days.
