Chả Giò
Chả Giò, or Vietnamese Fried Spring Rolls, are a popular appetizer or side dish. They are filled with a mixture of ground pork, shrimp, and vegetables, then wrapped in rice paper and deep-fried until crispy.
Ingredients - Serves 4
- Fish sauce - For dipping
- Vegetable oil - For frying
- Rice paper - 20 sheets
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Carrot - 1, grated
- Shrimp - 1/2 pound, peeled, deveined, and chopped
- Ground pork - 1/2 pound
Let's Get Started
- In a large bowl, combine the ground pork, shrimp, carrot, onion, and garlic.
- Soak a sheet of rice paper in warm water until soft, then place on a flat surface.
- Place a spoonful of the pork mixture in the center of the rice paper, then fold in the sides and roll up tightly.
- Repeat with the remaining rice paper and pork mixture.
- Heat the vegetable oil in a deep fryer or large pot to 375°F.
- Fry the spring rolls in batches until golden brown, about 3-4 minutes.
- Drain on paper towels and serve with fish sauce for dipping.
