Chowder
This creamy and comforting corn chowder is packed with sweet corn, potatoes, and bacon.
Ingredients - Serves 6
- Green onions - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Heavy cream - 1 cup
- Chicken broth - 4 cups
- Frozen corn - 4 cups
- Potatoes - 3 medium, peeled and diced
- Onion - 1 medium, diced
- Bacon - 6 slices, chopped
Let's Get Started
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
- Add the diced onion to the pot and cook until softened, about 5 minutes.
- Add the diced potatoes, frozen corn, chicken broth, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender or a regular blender, blend about half of the soup until creamy. Alternatively, you can use a potato masher to mash some of the potatoes and corn to thicken the chowder.
- Stir in the heavy cream and cooked bacon. Cook for an additional 5 minutes to heat through.
- Serve the corn chowder hot, garnished with chopped green onions.
