Ingredients - Serves 6

Let's Get Started

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
  2. Add the diced onion to the pot and cook until softened, about 5 minutes.
  3. Add the diced potatoes, frozen corn, chicken broth, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender or a regular blender, blend about half of the soup until creamy. Alternatively, you can use a potato masher to mash some of the potatoes and corn to thicken the chowder.
  5. Stir in the heavy cream and cooked bacon. Cook for an additional 5 minutes to heat through.
  6. Serve the corn chowder hot, garnished with chopped green onions.
