  1. Clean and prepare the seafood.
  2. In a bowl, mix the red curry paste, coconut milk, fish sauce, palm sugar, and eggs until well combined.
  3. Add the mixed seafood, kaffir lime leaves, and Thai basil leaves to the curry mixture and stir well.
  4. Cut the banana leaves into circles and heat them over a flame to make them pliable.
  5. Place a portion of the seafood curry mixture onto each banana leaf and fold into a packet.
  6. Steam the packets for 15-20 minutes, or until the curry is cooked through.
  7. Serve the Hor Mok Talay hot, still in their banana leaf packets.
