Ingredients - Serves 4
- Banana leaves - 4, for wrapping
- Thai basil leaves - 1/2 cup
- Kaffir lime leaves - 2, finely chopped
- Eggs - 2
- Palm sugar - 1 tablespoon
- Fish sauce - 1 tablespoon
- Coconut milk - 1 cup
- Red curry paste - 2 tablespoons
- Mixed seafood - 500 grams
Let's Get Started
- Clean and prepare the seafood.
- In a bowl, mix the red curry paste, coconut milk, fish sauce, palm sugar, and eggs until well combined.
- Add the mixed seafood, kaffir lime leaves, and Thai basil leaves to the curry mixture and stir well.
- Cut the banana leaves into circles and heat them over a flame to make them pliable.
- Place a portion of the seafood curry mixture onto each banana leaf and fold into a packet.
- Steam the packets for 15-20 minutes, or until the curry is cooked through.
- Serve the Hor Mok Talay hot, still in their banana leaf packets.
