Chocolate Chip and Strawberry Shortcakes
These delicious shortcakes are made with chocolate chips and fresh strawberries, topped with whipped cream.
Ingredients - Serves 6
- Whipped cream - 1 cup
- Fresh strawberries - 2 cups, sliced
- Semi-sweet chocolate chips - 1/2 cup
- Vanilla extract - 1 teaspoon
- Milk - 1/2 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/4 teaspoon
- Baking powder - 2 teaspoons
- Granulated sugar - 1/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 425°F.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
- Stir in the milk, vanilla extract, and chocolate chips until just combined.
- Turn the dough out onto a lightly floured surface. Gently knead the dough a few times until it comes together.
- Roll out the dough to about 1/2-inch thickness. Use a round biscuit cutter to cut out shortcakes.
- Place the shortcakes onto a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until golden brown.
- Remove the shortcakes from the oven and let them cool slightly.
- To assemble, slice the shortcakes in half horizontally. Place a spoonful of sliced strawberries on the bottom half of each shortcake.
- Top with a dollop of whipped cream and place the other half of the shortcake on top.
- Serve immediately and enjoy!
