Chickpea Veggie Loaf

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F and line a loaf pan with parchment paper.
  2. In a large bowl, mash the chickpeas until they are mostly broken down.
  3. In a pan, heat the olive oil and sauté the onion, garlic, bell pepper, and carrots until they are soft.
  4. Add the sautéed vegetables to the mashed chickpeas.
  5. In a small bowl, mix the flaxseed meal with water and let it sit for a few minutes until it thickens. This is your 'flax egg'.
  6. Add the 'flax egg', breadcrumbs, tomato sauce, salt, and pepper to the chickpea mixture and mix well.
  7. Transfer the mixture to the prepared loaf pan and press it down firmly.
  8. Bake for 60 minutes, or until the top is golden and firm.
  9. Let the loaf cool for a few minutes before slicing and serving.
