Chickpea Veggie Loaf
A hearty and nutritious vegetarian loaf made with chickpeas and a variety of vegetables. Perfect for a healthy dinner or lunch.
Ingredients - Serves 6
- Salt and pepper - To taste
- Tomato sauce - 1/2 cup
- Breadcrumbs - 1 cup
- Water - 6 tablespoons
- Flaxseed meal - 2 tablespoons
- Olive oil - 2 tablespoons
- Bell pepper - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Carrots - 1 cup, grated
- Chickpeas - 2 cups, cooked
Let's Get Started
- Preheat the oven to 375°F and line a loaf pan with parchment paper.
- In a large bowl, mash the chickpeas until they are mostly broken down.
- In a pan, heat the olive oil and sauté the onion, garlic, bell pepper, and carrots until they are soft.
- Add the sautéed vegetables to the mashed chickpeas.
- In a small bowl, mix the flaxseed meal with water and let it sit for a few minutes until it thickens. This is your 'flax egg'.
- Add the 'flax egg', breadcrumbs, tomato sauce, salt, and pepper to the chickpea mixture and mix well.
- Transfer the mixture to the prepared loaf pan and press it down firmly.
- Bake for 60 minutes, or until the top is golden and firm.
- Let the loaf cool for a few minutes before slicing and serving.
