Chickpea Spinach Stew

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the cumin and paprika and cook for another minute.
  4. Add the chickpeas and diced tomatoes, including the juice from the can, and bring to a simmer.
  5. Add the spinach and cook until it's wilted, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the stew warm.
