Chicken Shawarma Bowl
A flavorful and healthy bowl filled with marinated grilled chicken, couscous, tomatoes, cucumbers, and a tangy tahini sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Tahini - 1/4 cup
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Couscous - 1 cup
- Olive oil - 2 tablespoons
- Shawarma seasoning - 2 tablespoons
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Marinate the chicken breasts with the shawarma seasoning and 1 tablespoon of the olive oil. Let it sit for at least 15 minutes.
- While the chicken is marinating, prepare the couscous according to the package instructions.
- Heat the remaining tablespoon of olive oil in a grill pan over medium heat. Add the chicken and cook for 5-7 minutes on each side, until cooked through.
- In a small bowl, whisk together the tahini, lemon juice, garlic, and salt and pepper.
- To assemble the bowls, divide the couscous between four bowls. Top with the grilled chicken, tomatoes, and cucumber.
- Drizzle the tahini sauce over the top of each bowl before serving.
