  1. In a large pot, add the chicken, chicken broth, onion, ginger, star anise, cinnamon stick, and cloves.
  2. Bring the pot to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, until the chicken is cooked through and tender.
  3. Remove the chicken from the pot and let it cool slightly. Shred the chicken meat and set aside.
  4. Strain the broth to remove the solids and return the broth to the pot.
  5. Add fish sauce and sugar to the broth, and adjust the seasoning to taste.
  6. Cook the rice noodles according to package instructions.
  7. Divide the cooked noodles among serving bowls.
  8. Top the noodles with shredded chicken, bean sprouts, and chopped fresh herbs.
  9. Ladle the hot broth over the noodles and garnish with lime wedges.
  10. Serve the Chicken Pho with Sriracha sauce and hoisin sauce on the side for added flavor.
