Chicken Pho

Ingredients - Serves 4
- Hoisin sauce - To taste
- Sriracha sauce - To taste
- Lime - 1, cut into wedges
- Fresh herbs (thai basil, cilantro, mint) - 1 cup, chopped
- Bean sprouts - 1 cup
- Rice noodles - 8 ounces
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Cloves - 3
- Cinnamon stick - 1
- Star anise - 2 pods
- Ginger - 2-inch piece, sliced
- Onion - 1 large, sliced
- Chicken broth - 8 cups
- Chicken - 1 whole, about 3-4 pounds
Let's Get Started
- In a large pot, add the chicken, chicken broth, onion, ginger, star anise, cinnamon stick, and cloves.
- Bring the pot to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, until the chicken is cooked through and tender.
- Remove the chicken from the pot and let it cool slightly. Shred the chicken meat and set aside.
- Strain the broth to remove the solids and return the broth to the pot.
- Add fish sauce and sugar to the broth, and adjust the seasoning to taste.
- Cook the rice noodles according to package instructions.
- Divide the cooked noodles among serving bowls.
- Top the noodles with shredded chicken, bean sprouts, and chopped fresh herbs.
- Ladle the hot broth over the noodles and garnish with lime wedges.
- Serve the Chicken Pho with Sriracha sauce and hoisin sauce on the side for added flavor.
