Chicken Paitan Ramen
This Chicken Paitan Ramen is a rich and creamy Japanese noodle soup made with a flavorful chicken broth and topped with tender chicken slices, marinated bamboo shoots, green onions, and a soft-boiled egg.
Ingredients - Serves 2
- Soft-boiled eggs - 2
- Green onions - 2, sliced
- Marinated bamboo shoots - 1/2 cup
- Ramen noodles - 8 oz
- Salt - To taste
- Mirin - 2 tablespoons
- Soy sauce - 2 tablespoons
- Onion - 1, chopped
- Ginger - 1-inch piece, grated
- Garlic - 4 cloves, minced
- Chicken thighs - 2, boneless and skinless
- Chicken bones - 1.5 lbs
Let's Get Started
- In a large pot, add the chicken bones, chicken thighs, garlic, ginger, onion, soy sauce, mirin, and salt.
- Cover with water and bring to a boil. Reduce the heat and simmer for 2 hours, skimming off any impurities that rise to the surface.
- Remove the chicken thighs and shred the meat. Set aside.
- Strain the broth through a fine-mesh sieve, discarding the solids.
- Cook the ramen noodles according to the package instructions. Drain and set aside.
- Divide the cooked noodles between two bowls.
- Pour the hot chicken broth over the noodles.
- Top with the shredded chicken, marinated bamboo shoots, green onions, and soft-boiled eggs.
- Serve hot and enjoy!
