Chicken Fried Rice with Basmati Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the minced garlic and grated ginger for about 1 minute.
  4. Add the diced carrots and cook for 2-3 minutes until slightly softened.
  5. Push the carrots to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  6. Add the frozen peas and cooked chicken back to the skillet. Stir everything together.
  7. Add the cooked and cooled basmati rice to the skillet. Stir well to combine all the ingredients.
  8. Pour the soy sauce and sesame oil over the rice mixture. Stir to evenly coat everything.
  9. Season with salt and pepper to taste. Cook for an additional 2-3 minutes to heat everything through.
  10. Remove from heat and garnish with chopped green onions.
  11. Serve hot and enjoy!
