Ingredients - Serves 4
- Basil - 1 teaspoon, dried
- Oregano - 1 teaspoon, dried
- Chicken broth - 1 cup
- Dry white wine - 1/2 cup
- Tomatoes - 1 can (28 ounces), diced
- Mushrooms - 1 cup, sliced
- Red bell pepper - 1, sliced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Chicken thighs - 8, bone-in and skin-on

- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, garlic, bell pepper, and mushrooms. Cook until the vegetables are softened.

- Return the chicken to the skillet. Cover and simmer for 30 minutes.
- Uncover the skillet and continue to simmer for another 15 minutes, or until the chicken is cooked through and the sauce has thickened.
