Ingredients - Serves 4

Let's Get Started

  1. In a saucepan, combine the rice flour with 200ml of water. Stir until well mixed.
  2. Add the pandan leaves to the mixture and cook over low heat, stirring constantly, until it thickens into a jelly-like consistency. Remove from heat and let it cool.
  3. In another saucepan, combine the palm sugar with 300ml of water. Cook over low heat until the sugar dissolves and forms a syrup. Remove from heat and let it cool.
  4. Strain the pandan jelly to remove the leaves and cut it into small pieces.
  5. To serve, divide the pandan jelly, cooked red beans, and shaved ice into serving bowls.
  6. Pour the coconut milk and palm sugar syrup over the ingredients in each bowl.
  7. Serve immediately and enjoy!
