Chendol
Chendol is a popular Southeast Asian dessert made with coconut milk, pandan jelly, palm sugar syrup, and shaved ice.
Ingredients - Serves 4
- Shaved ice - As needed
- Red beans - 1/2 cup, cooked
- Water - 500ml
- Palm sugar - 100g
- Rice flour - 100g
- Pandan leaves - 5 leaves
- Coconut milk - 1 can (400ml)
Let's Get Started
- In a saucepan, combine the rice flour with 200ml of water. Stir until well mixed.
- Add the pandan leaves to the mixture and cook over low heat, stirring constantly, until it thickens into a jelly-like consistency. Remove from heat and let it cool.
- In another saucepan, combine the palm sugar with 300ml of water. Cook over low heat until the sugar dissolves and forms a syrup. Remove from heat and let it cool.
- Strain the pandan jelly to remove the leaves and cut it into small pieces.
- To serve, divide the pandan jelly, cooked red beans, and shaved ice into serving bowls.
- Pour the coconut milk and palm sugar syrup over the ingredients in each bowl.
- Serve immediately and enjoy!
