Bánh Xèo

Bánh Xèo is a crispy, stuffed rice pancake popular in Vietnam. Bánh means cake while xèo means sizzle. The name refers to the loud sizzling sound the rice batter makes when it is poured into the hot skillet. It's typically filled with pork, shrimp, and bean sprouts, and then fried until crispy.

Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mix together the rice flour, turmeric powder, salt, coconut milk, and water. Stir in the chopped green onions. Let the batter rest for 15 minutes.
  2. Heat a non-stick pan over medium heat. Add a bit of oil and then add a few slices of pork belly and shrimp. Cook until they are partially cooked.
  3. Pour a ladle of the batter into the pan, swirling it around to cover the surface of the pan. Cover the pan and let it cook for about 2 minutes.
  4. Uncover the pan, add a handful of bean sprouts on one side of the pancake. Cover the pan again and let it cook for another 2 minutes.
  5. Uncover the pan and fold the pancake in half. Let it cook for another minute to let the pancake become crispy.
  6. Remove the pancake from the pan and repeat with the remaining batter and fillings.
  7. Serve the pancakes hot with Vietnamese dipping sauce (nuoc cham).
