Chelo Morgh
Chelo Morgh is a traditional Persian dish consisting of saffron-infused rice and grilled chicken.
Ingredients - Serves 4
- Butter - 2 tablespoons
- Water - 4 cups
- Basmati rice - 2 cups
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Saffron threads - 1/2 teaspoon, dissolved in 2 tablespoons of hot water
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- In a bowl, combine the lemon juice, olive oil, saffron water, salt, and black pepper. Mix well.
- Add the chicken breasts to the marinade and coat them evenly. Let them marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken breasts for about 6-8 minutes per side, or until cooked through. Set aside.
- In a large pot, bring the water to a boil. Add the rice and cook until tender, about 10-12 minutes. Drain the rice.
- In a separate pot, melt the butter over low heat. Add the cooked rice and gently mix it with the melted butter.
- Cover the pot with a lid and let the rice steam for 5 minutes.
- Serve the grilled chicken breasts on a bed of saffron-infused rice.
