Ingredients - Serves 4

Let's Get Started

  1. In a bowl, mix together the ground beef, grated onion, minced garlic, salt, and black pepper.
  2. Divide the mixture into 4 equal portions and shape each portion into a long, cylindrical kebab.
  3. Preheat the grill to medium-high heat.
  4. Grill the kebabs for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  5. Meanwhile, rinse the basmati rice under cold water until the water runs clear. Drain well.
  6. In a pot, bring 4 cups of water to a boil. Add the drained rice and cook for 5 minutes. Drain again.
  7. In the same pot, melt the butter over low heat. Add the saffron water and stir well.
  8. Add the parboiled rice to the pot and gently mix it with the saffron butter.
  9. Cover the pot with a tight-fitting lid and cook over low heat for 20 minutes, or until the rice is tender and fluffy.
  10. While the rice is cooking, grill the halved tomatoes for about 5 minutes, until slightly charred.
  11. Serve the Chelo Kebab by placing a portion of saffron rice on a plate, topping it with a grilled kebab, and serving with grilled tomatoes and lemon wedges on the side.
