Chelo Kebab
Chelo Kebab is a traditional Persian dish consisting of grilled meat served with saffron-infused rice and grilled tomatoes.
Ingredients - Serves 4
- Lemon wedges - For serving
- Tomatoes - 4, halved
- Butter - 2 tablespoons
- Basmati rice - 2 cups
- Saffron - 1/4 teaspoon, dissolved in 2 tablespoons of hot water
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1 medium, grated
- Ground beef - 1 lb
Let's Get Started
- In a bowl, mix together the ground beef, grated onion, minced garlic, salt, and black pepper.
- Divide the mixture into 4 equal portions and shape each portion into a long, cylindrical kebab.
- Preheat the grill to medium-high heat.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
- Meanwhile, rinse the basmati rice under cold water until the water runs clear. Drain well.
- In a pot, bring 4 cups of water to a boil. Add the drained rice and cook for 5 minutes. Drain again.
- In the same pot, melt the butter over low heat. Add the saffron water and stir well.
- Add the parboiled rice to the pot and gently mix it with the saffron butter.
- Cover the pot with a tight-fitting lid and cook over low heat for 20 minutes, or until the rice is tender and fluffy.
- While the rice is cooking, grill the halved tomatoes for about 5 minutes, until slightly charred.
- Serve the Chelo Kebab by placing a portion of saffron rice on a plate, topping it with a grilled kebab, and serving with grilled tomatoes and lemon wedges on the side.
