Cheesy Quinoa Casserole
A delicious and healthy casserole made with quinoa, vegetables, and melted cheese.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cheddar cheese - 1 cup, shredded
- Mixed vegetables - 2 cups, frozen
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Preheat the oven to 375°F.
- In a saucepan, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.
- While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until soft.
- Add the mixed vegetables to the skillet and cook until heated through.
- In a large bowl, combine the cooked quinoa, vegetable mixture, half of the cheese, salt, and pepper.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake for 15 minutes, or until the cheese is melted and bubbly.
