Cheesy Quinoa Casserole

Let's Get Started

  1. Preheat the oven to 375°F.
  2. In a saucepan, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.
  3. While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until soft.
  4. Add the mixed vegetables to the skillet and cook until heated through.
  5. In a large bowl, combine the cooked quinoa, vegetable mixture, half of the cheese, salt, and pepper.
  6. Transfer the mixture to a baking dish and top with the remaining cheese.
  7. Bake for 15 minutes, or until the cheese is melted and bubbly.
